Last year, our hazelnut products were a hit. So, we are bringing them back! We sourced Oregon grown and roasted hazelnuts, and combined them with our dark chocolate. Hazelnuts add a creamy and nutty flavor and is one of our favorite inclusions we've experimented with. Included in this set:

 Many of us have a soft spot for Nutella, a world famous treat commonly described as a chocolate hazelnut spread. Let’s jump into a quick history of Nutella because it has a lot to do with chocolate. Nutella was born in Piedmont, Italy, as a way to stretch the lack of cocoa beans after World War II. Around this time, Michele Ferrero, the founder of Nutella, was the apprentice son of a small town pastry maker. He discovered that adding hazelnuts to chocolate as a supplement to cocoa beans was not only more affordable and readily available, but delicious as well.

 It is likely that Ferrero was inspired by chocolate makers in the city of Turin, Italy. The people of Turin first began making hazelnut chocolate cream aka "crema gianduia" in 1806 during another era of cocoa shortages. Napoleon's wars in South America made cocoa beans so astronomically expensive in the Savoy kingdom that local chocolatiers were going out of business – until they experimented with the idea of using local hazelnuts to make their chocolate go further. While Ferrero cannot be credited with inventing the combination, it's his Nutella recipe that has made the treat world famous.

 Today, the company Ferrero SpA, the maker of Nutella, uses about 25% of the 1.1 million tons global supply of hazelnuts. That's a whole lot!  One thing to note is, over the years, the contents of Nutella have changed. The majority of the core, wholesome ingredients have been replaced with sugar, palm oil, and a few other less expensive additives. Michele Ferrero’s original recipe was about 70% hazelnut paste and 20% chocolate, while the recipe Ferrero SpA uses today is 70% sugar & palm oil, 13% hazelnuts, 8.7% milk powder, 7.4% cocoa powder, non-fat milk solids, emulsifiers, and vanilla flavoring. 

For our Mānoa Chocolate Hazelnut Spread we've made a recipe closer to that of the original Nutella recipe. Just six simple ingredients: hazelnuts, organic cane sugar, cacao nibs, hazelnut oil, cocoa powder, and sea salt.

All of our chocolate is crafted from bean-to-bar at our chocolate factory in Kailua, O'ahu.

We're buying cacao direct from the farmer. This allows us to establish long lasting relationships based on trust and quality. By cutting out intermediaries we can also pay our farmers higher prices for their crop.
