For years now we've been making chocolate dipped strawberries for Valentine's Day and they're always a hit. But the nature of creating and distributing fresh dipped strawberries to the masses, especially those on the mainland, is a near impossible task. 

This year we were determined to create a collection that echoed the fun of a box of chocolate dipped strawberries, but also one that we could distribute to all of our customers, from Honolulu to New York. In this box you’ll find twelve 20g chocolate bars in 3 different chocolate strawberry flavors, from white to dark to crunchy.

What is white chocolate? Our white chocolate recipe includes just 3 simple ingredients: cocoa butter, organic whole milk powder, and organic cane sugar. The reason we still call this chocolate is because of the cocoa butter. The contents of a roasted cacao bean (pure chocolate) is about 50% butter and 50% solids. The "solids" (which are basically cocoa powder) are what contain the chocolatey flavor we know and love. The cocoa butter is what gives the chocolate its creamy consistency and helps to carry the cocoa solids smoothly across your palate. Additionally, the molecular structure of cocoa butter is what allows us to temper the chocolate into a solid "snappable" bar.

How do we infuse the strawberry flavor? We cannot add any moisture to chocolate. This would not only mess with the silky texture of the chocolate, but also make it un-temperable. So, adding fresh, juicy strawberries to our chocolate is out of the question. We source freeze dried strawberry powder for the job. The process of freeze drying eliminates all moisture from the berries, while still maintaining the flavor.

What are the "cacao nibs" on the back of the Strawberry Crunch Bar? This is 100% chocolate. After our cacao beans have been roasted we crack them into little bits called nibs. They are nutritious and crunchy with a pure chocolatey flavor.
