Hawaiʻi is the only state in the United States with a climate appropriate for cultivating the cacao tree. With a focus on cacao genetics, fermentation, and drying, Hawaiʻi is internationally recognized as producing some of the best cacao in the world. Additionally, Hawaiʻi cacao farms are still scarce, making Hawaiian beans some of the most expensive and exclusive.

Similar to the symphony of flavors found in coffee or wine, these five chocolate bars resound with the essence of their terroir—the very land from which they originated. Comprising a harmonious trio of ingredients—cacao, organic cane sugar, and cocoa butter—this simple recipe serves as a canvas, allowing the cacao’s intrinsic flavors to take center stage. The presence of flavor-neutral cane sugar tempers any bitterness, while the addition of cocoa butter contributes to a smooth texture.

By diligently sourcing the finest cacao available in the market, we unlock a vast range of tasting notes, spanning from nutty and fudgy to vibrant hints of citrus and fruit. A myriad of factors, including climate, tree genetics, soil composition, and the meticulous practices of our dedicated farmers, all converge to craft the distinct flavor profile of each chocolate. 70% single origin dark chocolate [60% cacao nibs, 10% cocoa butter, 30% organic cane sugar].

"70%" represents the amount of cacao present in the recipe. Because cocoa butter is technically cacao, its 10% is added to the 60% nibs, making this bar a 70% dark chocolate. Why 70% you say? This recipe has become the craft chocolate industry's standard for a single origin dark chocolate. The ratio of 70% cacao to 30% sugar has been identified as an ideal balance to taste the inherent flavor present in the cacao.

"Single origin" signifies that all the cacao beans for a particular batch of chocolate were sourced from the same region and or country.

    MILILANI, OʻAHU ISLAND

    Tasting Notes: Cherry, Passion Fruit, Raspberry

    The Hawaiian cacao of this single origin chocolate bar originates from Mililani Estate in central Oʻahu. This diverse 97 acre farm hosts crops of breadfruit, banana, avocado, taro and 10 acres of cacao. Their first ever cacao harvest occurred in late 2019 as the trees turned three years old. The chocolate produced from this Estate is some of the most bright and fruity we've ever made. After only a few months of being available, this bar has won multiple awards, including gold for Best Dark Chocolate at the Chocolate Alliance Awards.

  • KEALAKEKUA, HAWAIʻI ISLAND

    KEALAKEKUA, HAWAIʻI ISLAND

    Tasting Notes: Macadamia, Strawberry, Vanilla

    Located on the west side of Hawaiʻi Island (the Big Island), Kealakekua is hot and dry. Normally, cacao trees would be unable to survive the harsh lava field conditions, but with irrigation they thrive. The cacao of this chocolate bar is farmed, fermented and dried by the Hard Rock Gardens Estate in Kealakekua.

    Kahaluʻu, Oʻahu Island

    Tasting Notes: Blueberry, Roasted Peanut, Banana

    In Hawaiian, the word Kahaluʻu means “diving place” or “dripping trough”. It’s a fitting name for this small town on the East Side of Oʻahu Island (just 20 minutes from our Chocolate Factory). The steep Koʻolau mountain range cradles the shallow waters of Kāneʻohe bay, making for excellent year-round diving, fishing, and farming. Back in lush Kahaluʻu Valley, farmer, Ben Field is taking advantage of these idyllic growing conditions. On his family land, Ben has planted approximately 800 cacao trees. As of 2023 the trees are now able to produce enough fruit for a single origin Kahalu‘u chocolate bar. 

  • KONA, HAWAIʻI ISLAND

    KONA, HAWAIʻI ISLAND

    Tasting Notes: Hibiscus, Caramel, Hazelnut

    The Likaʻo Kula Farm in Kona is one of our oldest sources of Hawaiian cacao. They have always been a reliable source for some of the highest quality beans in Hawaii. In 2017 at one of the largest chocolate festivals in the world, the Salon Du Chocolat in Paris, these Hawaiian grown beans from Kona won top 15 best flavored cacao in the world.

  • NĪNOLE, HAWAIʻI ISLAND

    NĪNOLE, HAWAIʻI ISLAND

    Tasting Notes: Lime, Walnut, Brownie

    The Hawaiian cacao in this single origin chocolate bar comes from Nīnole Cacao, located on the lush Hamakua coast of Hawai‘i Island. This seven acre orchard was established in 2019 and hosts about 2000 cacao trees. The first harvests began in the summer of 2022.

All of our chocolate is crafted from bean-to-bar at our chocolate factory in Kailua, Oʻahu.

We're buying cacao direct from the farmer. This allows us to establish long lasting relationships based on trust and quality. By cutting out intermediaries we can also pay our farmers higher prices for their crop.
