About the Bar: Kamananui represents a partnership between Cacao Services Inc. and Mānoa Chocolate. Kamananui cacao grows in an agroforest with other tropical fruit and hardwoods. The orchard was carefully designed to help our trees thrive on the North Shore of O’ahu. Kamananui hosts a rich diversity of cacao genetics, while also acting as a principal hub for cacao breeding in Hawai’i.

Mount Ka‘ala, featured on this package, is O’ahu’s tallest peak. The Kamananui cacao orchard sits nestled in Ka‘ala’s foothills, distinguished by its red soil, large monkey pod trees, wild pua‘a (boar), and peacocks. This farm is named after, and located in the Kamananui ahupua‘a. An “ahupua‘a” is a traditional Hawaiian land division system that extends from the mountains to the sea, encompassing all the resources needed for self-sufficiency. The name Kamananui is derived from the Hawaiian words nui, meaning “big,” and mana, meaning “path,” translating to “wide path.”

Tasting notes: peach, caramel, and pomegranate. Alcohol pairings: Wine is Sangiovese. Liquor is bourbon. Beer is milk stout.

70% single origin dark chocolate [60% cacao nibs, 10% cacao butter, 30% organic cane sugar].

"70%" represents the amount of cacao present in the recipe. Because cacao (aka cocoa) butter is technically cacao, its 10% is added to the 60% nibs, making this bar a 70% dark chocolate. Why 70% you say? This recipe has become the craft chocolate industry's standard for a single origin dark chocolate. The ratio of 70% cacao to 30% sugar has been identified as an ideal balance to taste the inherent flavor present in the cacao.

"Single origin" signifies that all the cacao beans for a particular batch of chocolate were sourced from the same region and or country.
