ABOUT MĀNOA CHOCOLATE
Why use the name Mānoa Chocolate when you are located in Kailua?
Locals often associate the word “Mānoa” with Oʻahu’s lush valley, but the Hawaiian word mānoa can also mean “solid,” “vast,” or “depth.”
We founded Mānoa Chocolate with these ideas in mind. To us, mānoa represents the depth and complexity of fine cacao, the care that goes into crafting chocolate from bean-to-bar, and the long-term relationships we build with cacao farmers throughout Hawaiʻi and around the world.
While our chocolate factory, tasting room, and wine bar are located in Kailua on Oʻahu, our cacao sourcing and farming partnerships extend across the Hawaiian Islands.
What does bean-to-bar chocolate mean?
Bean-to-bar chocolate refers to chocolate made by overseeing the entire chocolate-making process — from sourcing cacao beans to roasting, refining, tempering, and molding the finished chocolate bar.
At Mānoa Chocolate, every step of production happens in-house at our chocolate factory on Oʻahu. This hands-on process allows us to carefully develop flavor and highlight the unique characteristics of each cacao origin.
What makes bean-to-bar chocolate different?
Bean-to-bar chocolate focuses on quality, transparency, and flavor. Unlike mass-produced chocolate, bean-to-bar makers work directly with cacao origins and carefully control each stage of production to showcase the natural flavor of the cacao itself.
At Mānoa Chocolate, we ethically source cacao from Hawaiʻi and around the world, then roast, refine, grind, temper, and mold our chocolate in small batches at our Kailua factory. Similar to coffee or wine, cacao can express different flavor notes depending on where and how it is grown.

Is your chocolate local?
All of our chocolate is handcrafted from bean-to-bar at our chocolate factory in Kailua on the island of Oʻahu.
We source cacao from Hawaiʻi-grown farms whenever possible, including farms on Oʻahu and Hawaiʻi Island. Because Hawaiʻi’s cacao industry is still growing, we also work with select farms around the world that prioritize quality, transparency, and responsible farming practices.
Where does Mānoa Chocolate source cacao?
We source cacao from both Hawaiʻi and carefully selected farms around the world.
In Hawaiʻi, we work with farms and growing regions including Kamananui, Honoliʻi, Waimānalo, Mililani, Waiāhole, Kona, Haleʻiwa, and Koʻolaupoko/Kahaluʻu. Internationally, we source cacao from origins such as Ecuador, Dominican Republic, Tanzania, and Uganda.
Whenever possible, we prioritize direct relationships with farmers and producers so we can better understand how the cacao is grown, fermented, and dried before it reaches our factory.

Can you visit a cacao farm on Oʻahu?
Yes. Mānoa Chocolate offers cacao farm tours on Oʻahu where guests can experience how cacao is grown and processed in Hawaiʻi.
Our Kamananui Cacao Orchards tour takes place on Oʻahu’s North Shore at the base of Mount Kaʻala. Guests learn about cacao farming, harvesting, fermentation, drying, and chocolate production while exploring one of the most genetically diverse cacao farms in the world.
What should I expect on a cacao farm tour in Hawaiʻi?
Our cacao farm tours are designed to give guests a firsthand look at how cacao is grown in Hawaiʻi and transformed into chocolate.
Visitors may walk through cacao orchards, learn about harvesting and post-harvest processing, taste fresh cacao fruit when in season, and enjoy guided chocolate tastings featuring Hawaiʻi-grown cacao. The Farm Tour focuses on cacao agriculture and gives guests the opportunity to experience cacao trees growing in Hawaiʻi while learning about harvesting, fermentation, and drying.
Together, these experiences provide a complete “tree-to-bar” understanding of chocolate making in Hawaiʻi.

Is dark chocolate healthy?
Dark chocolate contains naturally occurring antioxidants as well as minerals such as magnesium and iron.
The nutritional profile of chocolate can vary depending on the cacao percentage and ingredients used. At Mānoa Chocolate, we focus on carefully sourced cacao and simple ingredients that highlight the flavor of the cacao itself.
Are your bars dairy-free?
Many of our bars are dairy-free, including several of our Hawaiʻi-grown single origin bars and dark chocolate bars.
However, our facility also processes milk products, so cross-contact is possible. We recommend reviewing each product’s ingredient list carefully if you have dietary restrictions or allergies.
Are your bars gluten-free?
Most of our products do not contain gluten ingredients. However, gluten is occasionally processed in our facility using shared equipment.
While we follow careful cleaning and sanitation procedures, we cannot guarantee the complete absence of cross-contact.
How many calories are in a chocolate bar?
The calorie content of our chocolate bars varies depending on the ingredients and cacao percentage used in each recipe.
